LEMON BALM

General information: Lemon balm, with its subtle lemon scent and flavor, is valued as a culinary, cosmetic and medicinal herb. Dried leaves make a refreshing tea, either iced or hot. Dried leaves are used as an ingredient in many potpourris. Used throughout history as a medicinal herb, lemon balm has a sedative property and has been used to relieve gas, reduce fever, and increase perspiration. Hot water teas of the leaves have been shown to possess strong antibacterial and antiviral qualities. Most recently, lemon balm appears to boost memory as well.

To make a tea: 2 teaspoons dried herb in 1 covered cup boiling water for 15 minutes. Strain, and flavor with sugar or honey and a twist of lemon, if desired, before drinking.
